What makes our Noir - Coffee Liqueur so good?
Every great spirit starts with great ingredients. For our Noir Coffee Liqueur, that journey begins with one of the most important ingredients of all – the coffee.
It starts with exceptional coffee.
We source our beans from The Coffee Roaster in Alexandria, using their award-winning TCR22 Blend. This carefully curated blend combines premium Arabica beans from some of the world’s top rated coffee growing regions including Brazil, Guatemala, Colombia, and Ethiopia.
The beans are roasted on a Chinook Air Roaster, allowing the unique character of each origin to shine through while creating a beautifully balanced blend that's strong, smooth and naturally sweet. It's not just the coffee we use for Noir, it's also the blend we enjoy drinking ourselves every morning at the distillery!
Why we choose espresso over cold brew.
Many coffee liqueurs are made using cold brew coffee; however, we take a different approach.
Once our beans are freshly roasted, we make espresso shot by shot using our Italian espresso machine, affectionally known as Sofia. She's a little temperamental, but when she's happy, she produces an incredible espresso.

Making espresso this way takes considerably more time and effort than using a cold brew method, but we believe some things are worth slowing down for. By extracting the coffee fresh, we capture the rich aroma, depth of flavour and beautiful crema that comes from a properly made espresso.
We believe this creates a more rounded and balanced coffee character in the finished liqueur, with a rich mouthfeel and a smoother finish. It's one of the choices we make that helps create the unique character of Noir.
Real spices. No shortcuts.
Coffee is only part of our Noir's story.
We use whole spices, not flavourings, which we crush before gently toasting them to unlock their natural oils and aromas. Ginger, black peppercorns, allspice, nutmeg, cloves, cardamom, and vanilla each contribute subtle layers of warmth and complexity that complement rather than overpower the coffee.
Why we use a vodka base.
Every ingredient deserves a quality foundation, so we start with a clean, neutral vodka. Unlike aged or flavoured spirits, a neutral vodka allows the coffee, and carefully selected spices, to take centre stage without competing for attention. The role of the base spirit in a Coffee Liqueur isn’t to dominate the flavour, but to bring balance and allow each ingredient to shine. The result is a rich, smooth liqueur where the espresso and spices remain the stars of the show.
The result.
All of this time, effort, and attention to detail creates a coffee liqueur that's rich, smooth, and full of character.
Some people enjoy Noir neat or over ice. Others use it to make an exceptional Espresso Martini. It also shines in cocktails like an Irish Coffee, White Russian, Coffee Old Fashioned, Iced Latte, or Botany Flip.
For us, Noir isn't just another coffee liqueur. It's our way of bottling everything we love about great coffee.
