A lot has happened since our last newsletter! April and May have been a blur with the Sydney Royal Easter Show,  Australian Distillers Conference, Tocal Field Days, and The Botanica Festival. 

We also attended the Bundeena Saltwater Market for the first time, as well as, the Maroubra Beach Market. On top of this we have WON GOLD and best in style for our cask strength Rum at the World Rum Awards! And finally after 4 years of maturation, we are have released our very own Bitters, full of nutty, citrus and cacao flavours.

 We are absolutely thrilled to announce that our newly released Cask Strength Rum (SRC-2632) has been awarded Gold and Best in Style at the World Rum Awards!

New Release: Green Walnut Bitters

We’re proud to introduce our latest creation: Green Walnut Bitters! This rich and distinctive addition to your cocktail collection is a limited release, crafted with green walnuts, cloves, lemon zest, cinnamon, vanilla, and coffee beans. Aged for four years to develop deep, layered flavour, these bitters are bold, spiced, and slightly nutty. To celebrate the release of our new Walnut Bitters, we’re sharing a simple yet delicious cocktail for you to enjoy—we certainly did!

Briebelle is a luscious, triple-cream brie from Hunter Belle that stands out from the crowd. While many brie’s can lean toward the bland, Briebelle bursts with a rich medley of flavours and aromas—think salty, grassy, and mushroomy notes layered over a decadently buttery texture. Paired with our Banks & Solander Noir, this combination creates an indulgent, perfectly balanced experience that elevates both the cheese and the spirit. Truly a match made in heaven.

Serving Suggestion: For the ultimate tasting experience, serve Briebelle at room temperature, allowing its creamy texture to fully develop. Pair with a neat pour of Banks & Solander Noir in a tasting glass or made into a White Russian.

Award-Winning Rum: SRC-2632!

We are absolutely thrilled to announce that our newly released Cask Strength (SRC-2632) Rum has been awarded Gold and Best in Style at the World Rum Awards! This marks the second time our Cask Strength Rum has received this prestigious recognition, a testament to the passion and craft we pour into every barrel.

Cask 2632 has been resting for just over three years, developing deep, rich flavours. Expect notes of sweet oak, roasted chestnuts, golden syrup, and cherry cola, with hints of pineapple, peach, and banana, leading to a long, creamy finish.

Our Cask Strength Rum is available now on our website in limited quantities – don’t miss your chance to experience this award-winning spirit.
